Ingredients: 3 fresh ripe tomatoes cut into wedges 1 cucumber, sliced and halved 1 small red onion, sliced 1 cup Kalamata or Black Olives 1/2 cup Goat Feta Cheese, crumbled Optional - 1/2 head of iceberg lettuce, chopped Optional - 1 small green pepper, chopped Optional - 1/2 cup pepperoncini Dressing: 6-8 tbsp Rallis Ice Pressed® Olive Oil 2 tbsp red wine vinegar 2 tbsp dried Greek oregano 1/2 tsp sea salt Instructions: In a bowl, mix together the dressing and set aside.
